The selection of our ingredients and raw materials
The selection of our partners and our suppliers is made according to the quality of their products, their know-how and finally the respect of mutual commitments.
Our workshop located not far from Boulogne-sur-Mer, France's leading fishing port, allows us a regular supply of fresh fish throughout the year. Our wholesalers, partners and friends for the most part, are fully aware of our needs, our values and our expectations.
Our shore-gathering partners are also familiar with our requirements and criteria in terms of freshness and quality of Salicornia.
Our saffron
On our saffron, we only work from pure saffron flower filament (category 1), which we import directly from Iran, the world's leading saffron-producing country.
Much more expensive than the saffron powder used in the food industry, but what a taste, what a difference!
Trust does not exclude control, we proceed to the validation of all our supplies at the time of their reception. This is how by buying quality, we guarantee you good.
Respect for nature today, to preserve tomorrow.
Our love of the sea obliges us to respect its resources. Aware that they are not infinite, our preparations are made with non-endangered species of fish and shellfish. Our marine plants, 100% of French origin, are picked by sea professionals according to the authorizations issued by the authorities (licences, areas and opening and closing dates set each year according to the season).
Our salts
Our salts are harvested by a salt worker harvesting in the salt marshes of Guérande.
Delicate fruit of the ocean, the sun, the wind and the ancestral know-how of the salt workers, the Guérande salt and the Guérande fleur de sel that we offer are harvested using traditional methods and entirely by hand.

This is why our products are rewarded and so appreciated.
The Label Rouge on our fish soups guarantees the superior quality of our flagship product through the daily application of strict procedures and compliance with demanding specifications. We only work with noble species of fish and extra fresh quality which represents 40% of the product. For the rest, it is a secret whose composition is transmitted from druid's mouth to druid's ear. But at home, we will never hide the good taste of fish with an endless list of vegetables or additives...even if we love vegetables, but not in fish soup.
No fish soup should not be made from pieces that no one wants anymore! At least not with us!
Our salts are certified ORGANIC because for us, only the sun, the sea and the know-how of the salt worker must be at the origin of our products.
We use real Lobster and Crab meat to make our soup and our bisque from MSC certified producers, guaranteeing the preservation of resources and sustainable catching techniques.
Finally, because we are a company viscerally attached to the traditions of our region, our products are labeled Saveurs en'Or, a guarantee of a preparation of the region from local raw materials and we are proud to promote the know-how of our beautiful area.
